Combine miso, mustard, 3 TBS fresh lemon juice and water. Mix well. If you want a thinner sauce, add a little more water. This makes a thick, strongly flavored sauce that can be drizzled over beans, grain dishes, vegetables and salads. It also makes a great sandwich spread. Variation: use orange juice instead of lemon juice for a less tart sauce. Variation: sautee some onions and garlic or shallots and add to the sauce.
