Here’s a recipe for an easy vegan miso mustard sauce. Miso mustard sauce is a versatile sauce that adds a lot of flavor without adding any oil. This easy vegan version that can also be used as a salad dressing and a sandwich spread. Try it as an alternative to Vegenaise or anytime you are looking to balance an oily dish with an oil-free sauce. It is also a good sauce for cold noodle dishes. Combine miso, mustard, 3 TBS fresh lemon juice and water. Mix well. If you want a thinner sauce, add a little more water. This makes a thick, strongly flavored sauce that can be drizzled over beans, grain dishes, vegetables and salads. It also makes a great sandwich spread. Variation: use orange juice instead of lemon juice for a less tart sauce. Variation: sautee some onions and garlic or shallots and add to the sauce.
