How Do You Make Fabulous Chocolate Eclairs?
Filled with whipped cream and topped with chocolate, homemade eclairs make a special treat for family and friends. Heat oven to 425 degrees. Butter flat baking pans. Add the butter to the boiling water. Bring water back to a boil and stir in the salt. Add the flour and beat until it is smooth. Keep beating, with pot over moderate heat, UNTIL THE BATTER JUST begins to pull away from the edges of the pot. It is important that you do not overcook mixture at this time. Remove from heat and cool slightly. Add one egg at a time as you beat vigorously. Continue to beat until the surface of the mixture is glossy. Cover and chill until firm. Force batter through the pastry tube into equal portions. Bake for 30 minutes without opening oven. Bake approximately 10 minutes more or until the crusts are light brown. Cool completely. When completely cooled, cut open at the sides. Set aside. Make glaze by first melting the butter and chocolate together in the top of a double boiler. Stir in the sugar.
