Love fig newtons, but not high fructose corn syrup and partially hydrogenated oils? Make your own Fig Newtons at home! They’re healthier – and just as delicious! In a small saucepan, combine figs, water, orange juice and 1/3 cup sugar. Bring fig mixture to a boil. Reduce heat and let figs simmer for 1 hour or until soft and spreadable. Set aside to cool. In a large bowl, beat butter and sugar together at medium speed for about 2 minutes until creamy. Add egg white and cream of tartar to butter and sugar mixture, and beat until stiff. Stir flour and vanilla into butter mixture. Dough will be very stiff. Shape the dough into a disc, wrap in plastic and refrigerate at least 1 hour. After dough and filling have chilled, preheat oven to 350 degrees and lightly grease a baking sheet. On a well-floured surface, roll dough out into a large rectangle about 1/4″ thick. Cut dough in half lengthwise. Spread 1/2 of the fig mixture down the center of each strip of dough. Fold the sides of the dough
