It’s almost BBQ season and I’m going to show you how to make a dry rub for babyback ribs. I like to use garlic, rosemary, Cajun spice, lemon pepper, chipotle, mesquite, and of course, salt & pepper. Mix all these spices together in a shallow pan. Make sure they are blended well. Clean your ribs and peel off the membrane covering the bones on the inside of the slabs. I like to wet the ribs with some orange juice and then put them in the spice mixture and coat both sides of the ribs well. Wrap the slabs in plastic wrap and refrigerate overnight. Preheat oven to 225 degrees. Remove your ribs from the plastic wrap and stack them in a baking dish meaty side up and cover with foil. Bake for about 2 hours. The ribs should be very tender now and you can finish them off on the grill in about 1/2 hour. I brush on my favorite BBQ sauce thinned with beer while grilling. Remove the ribs from the grill and let rest for at least 5 minutes. ENJOY A GREAT FINGERLICKING RIB DINNER!!
