How Do You Make French Lentil Soup?
French lentils are native to Le Puy-en-Velay in central France. They have a rich earthy flavor and tend to retain their shape when cooked. Today, French lentils are grown in other parts of the world. This soup recipe combines the rich, peppery flavor of French lentil with Herbes de Province, an herb blend common to the South of France. Heat the olive oil to medium-high in a large pot or sauce pan. Saute the onions, carrots, shallots and garlic until soft and slightly browned. Add the lentils, and tomatoes and Herbes de Provence and stir. Add the chicken broth and water and bring to a boil then reduce heat to medium-low. Cover, and simmer about 35 minutes, or until the lentils are tender. Add the dry vermouth and let simmer for another 10 minutes. Serve in individual bowls and garnish with celery leaves.
