You need to use a heavy based pan, continue to stir- never leave it unattended.The reason it may not have set is because you need to get it to the ‘soft ball’ stage, which is you get a small amount of the fudge mix and drop it in a glass of water if it forms into a soft ball that is pliable then it is ready.You shouldn’t have to put it in the freezer this way it should set in the fridge. Also I can see you over cooked it, it only needs about 15 mins.
