This simple soup is a satisfying winter warmer. Makes two servings. Finely chop garlic and cut potatoes into ½-inch pieces. Warm oil in a heavy saucepan over moderate heat. Cook garlic and potatoes, stirring occasionally, until pale golden (the potatoes will not be cooked). Don’t let the garlic burn. Add water and salt to taste. Simmer for 20 minutes, or until potatoes are very soft. Puree soup in blender or food processor until smooth and reheat. Stir in thinly sliced scallions and salt and pepper to taste.
