So what you do is I kind of chop it roughly and then you take the side of your knife and you just kind of press it down. Give it a smash if you can. Run the tip of your knife through it and you would see that it is really breaking it down and the juices are all coming out. You just collect it like that. You just keep doing it and eventually you would see that it looses the grains and it becomes a garlic paste. It take a little bit of patients. So when you put it into the peanut sauce and you don’t have to worry about having chunks of garlic, like people bitting into chunks of garlic it is just nice. But it will give it a nice garlic taste. So you just keep collecting it in the middle and keep going.
