Black-eyed beans, also called cowpeas, are a staple in some parts of Africa. They probably came to the United States via the African slave trade. Serves 4. Cook the black-eyed beans for 1 hour or according to package directions. Mash the cooked beans and set aside. Heat the oil in a sauté pan over medium heat and add the onion and tomatoes, stirring frequently, for about 3 minutes. Add the mashed beans and chili pepper; add salt and pepper to taste. Cook for 10 minutes, stirring occasionally. You may need to add a little water if the mixture becomes dry. Serve hot with fried plantains or rice.
