You can use glass or plastic, whichever you prefer. Put your wet ingredients in your bowl and mix with a handheld mixer or machine mixer of your choice until creamy and smooth. Add your gluten free flour to your creamed mixture. Once thoroughly mixed, roll your dough into a log shape about 7 or 8 inches long. Chill for about 15 minutes or so until firm in the refrigerator. Take cookie dough out of the refrigerator and slice into 1/4 in slices. Place 9 to 12 cookies on a cookie sheet at a time and bake for 10 to 12 minutes or until cooked thoroughly and golden brown. Place on cooling rack or paper towels to cool and ENJOY!
