How do you make good potato and leek soup?
This tastes great and is easy to make. It was a popular starter when I made dinner for my friends… Rachel even asked if she could take some back home with her. About 1 tbsp butter About 1 tbsp olive oil 4 leeks, sliced 3-4 medium potatoes, peeled and chopped into cubes 1.5L vegetable stock ground black pepper Melt the butter in a medium saucepan with the oilve oil. Pop in the leeks and cubed potatoes and sweat for five minutes, stirring frequently to avoid browning. Add the stock, bring to the boil and simmer for ten minutes with the lid on until the potatoes are soft. You can check their doneness by poking it with a knife. You can serve it as it is, mash up the potatoes or blend it. I like to use a little less stock to produce a thicker soup. Or you could use another potato.
