Pop in the leeks and cubed potatoes and sweat for five minutes, stirring frequently to avoid browning. Add the stock, bring to the boil and simmer for ten minutes with the lid on until the potatoes are soft. You can check their doneness by poking it with a knife. You can serve it as it is, mash up the potatoes or blend it. I like to use a little less stock to produce a thicker soup. Or you could use another potato.
