This is an easy and delicious dish that works well as a main course for lunch or an accompaniment to any grilled meat or fish. I’ve taken this to many parties and it’s always a hit. Serves four for lunch or more as a side dish. First boil your pasta to the point of being “Al Dente” or firm to the bite, but NOT undercooked. This will take 8-10 minutes and you should test your pasta to make sure it’s good to go. Once done, put it in a strainer and run under cold tap water to stop the cooking. After that, place it in whatever bowl you plan on serving it in. Since we are using tomatoes and other acids, glass or porcelain are the best to use. I do not advise using an aluminum bowl for the storage or serving of acidic food. In a large (1 pint) mixing cup or small bowl, whisk your olive oil, vinegar, lemon juice, garlic, and herbs.
