These are great, fun, and healthy snacks for kids. My kids love to make them with me! Cook about 1 cup of brown rice according to directions. Allow to cool to room temperature. Peel and chop carrots in think strips. Chop zucchini in thin strips. Lay one tortilla out and spread hummus over it. Cover hummus with a thin layer of rice. Don’t go all the way to the edges on the sides because this part will be cut off. Lay one cheese stick close to one edge and begin to roll the tortilla around the cheese stick. Then add a couple pieces of carrots and roll a little more. Then add a couple pieces of zucchini and finish rolling up. Gently squeeze the roll with your hands to help it stick together. Place the roll on a cutting board and slice in half. It’s easier to start slicing from the center. If you start on the end of the roll, it will fall apart.
