Nothing is measured if you want to do this right. Just start with your base using the tomato sauce, brown sugar and honey. Save the tomato paste till later if you need to thicken up your sauce. Simmer the base on medium high until the sauce starts to brown a little and, and is bubbling. (about 15-20 with constant stirring). Have plenty of extra ingredients, lower heat a little and start adding them little by little while simmering in a large pot on medium, to medium high. Just add a dash of this, stir then taste. Then add a dash of that, stir then taste. Keep up this process while adding the ingredients little by little. I have been doing this for years. Each time it comes out a little different then the last, but better then the time before.
