0

Hummus is an ancient Middle Eastern dip that has gained in popularity in recent years. Made from garbanzo beans, or chickpeas, it is a refreshing dip with pita breads, crackers, or fresh vegetables such as carrots and edamame. It’s the perfect party dip. It’s also perfect for unexpected guest, as a batch of hummus can be whipped up in a food chopper in minutes. It’s nutritious, having a high protein content, and plenty of folate and vitamin B6. Drain the garbanzo beans (chickpeas) and place in a mini food chopper or food processor. Add the cilantro leaves and the clove of garlic. Turn on the chopper and blend until smooth. Add one tablespoon of olive oil and the red pepper without seeds. Blend again until smooth. Scoop into a bowl. Garnish the hummus with a sprinkling of paprika, a cilantro leaf, and a pinch of sesame seeds, pine nuts, olives, or feta cheese. Serve the dip with fresh vegetables, whole grain crackers, or pita bread.
