One of the best things about using fresh lasagna noodles is that you don't have to cook them before assembling your lasagna - just throw them right after they come out of the pasta maker. (Recipe makes 1 lb. of pasta - enough for a 9x13 pan of lasagna with 3 layers.) Pour 2 1/4 c. all purpose flour into a large bowl. Push flour up the sides of the bowl to make a well in the middle. Crack 3 eggs into the center of the well in the flour. Begin stirring the eggs into the flour with a fork, slowing pulling in more flour with each stir. Keep stirring until egg and flour are fully mixed. Add a small amount of water if the mixture seems too dry, or a small amount of flour if it's too sticky.
