A chicken roaster can often yield a lot of meat even for a family and making soup out of the leftover bones is an easy soup to make at home instead of buying soup at your deli or canned soup. This soup also freezes well and with cold and flu season on its way, having a container of chicken soup ready to pop in the microwave and heat up is great medicine. Step 1 Remove most of the chicken from the roaster and set aside for later. Place the roaster in a large stock pot and cover with cold water. Put up to a boil. Step 2 When water boils, skim foam (if any) off top of soup with a spoon. Reduce the flame to a simmer and cover and allow to cook for 1 hour. Step 3 Prepare the vegetables. Take garlic, onion and parsley and chop finely in a food processor. If you do not have a food processor, mince finely with a chef’s knife. Step 4 P
