I came up with this homemade soup on a busy night when I had forgotten to thaw out some ham that I had planned to use for dinner. It’s quick, easy and surprisingly tasty. Step 1 Chop up your bacon and toss it into a large wok, or whatever large pot you have on hand. (I make almost everything in my wok.) I like to use my kitchen shears to cut up the bacon but that’s a personal preference, I just find it easier than cutting slimy, slippery bacon with a knife. Step 2 Cook the bacon until it’s nice and brown then add in the diced tomatoes, potatoes, chicken stock, and water. Stir everything up and let it cook until it starts to boil. If you’re using thawed chicken stock it’ll boil much faster, but I always toss mine into the homemade soup frozen because I’m a bit of a scatter brain and it’s hard to think that far ahead. You may have better luck with that. Step 3 Once the homemade soup boils, set it to simmer and cover it for about 20 minutes. You’re looking for the potatoes to become soft
