How Do You Make Homemade Turkey Soup?
The holiday is over, the turkey is almost gone. What to do with what’s left? Make turkey soup! I loved this soup when I was growing up. It’s a great way to stretch the budget. This is a simple yet delicious soup that you can make for you and your family. In large stock pot add olive oil. Stir the diced carrots, onions, and celery in and turn heat on low-medium. Coat veggies with oil and heat until onions are translucent (almost transparent). Add turkey stock and simmer about 40 minutes or until carrots are tender. Once carrots are tender, add the fresh or frozen vegetables and simmer for 30-40 minutes more. You may choose to cut the vegetables up to reduce cooking times. Add noodles (I used dried store bought noodles) and simmer until tender. Add turkey meat (optional) and simmer another 10-15 minutes. Add salt and pepper to taste. This is best served hot.
