Irish potato cakes are a real old-time recipe which may have originated in Ireland, since that’s where this family recipe came from. But it’s likely that this dish was prepared in other places too. I can’t even begin to tell you how delicious these are, you’ll just have to try some for yourself. Cook the potatoes in their skins (wash the potatoes thoroughly first). Peel and mash. While the potatoes are hot, add the butter and sprinkle with the salt. Add the flour and knead the dough only until it is elastic. The dough should be soft and spring back when pulled with the tip of a finger. Raisins are optional but make a nice touch. Add the raisins to the dough before kneading it. Roll dough about an inch thick, cut dough into triangles, and bake on hot griddle until potato cakes are brown-about 10 to 12 minutes on each side. If you don’t have a griddle to cook these on, then use a cast iron frying pan, greased very lightly. Split and butter while hot. Serve these plain, or with maple syru
