How Do You Make Irish Potato Candies?
• In a large bowl, cream together the butter and cream cheese. • Add the vanilla and powdered sugar and beat until the mixture forms a ball. • Add the coconut and stir with a spoon. • Roll the mixture between your hands to form small potato shaped candies, or roll into small balls. • Place the cinnamon in a regular plate. Roll the balls in the cinnamon, then place them on a different plate and cover with a napkin or something like that. Place them in the fridge an hour or until firm.
