I usually roast my seeds when I carve my pumpkins the night before Halloween. It is a fun activity for the whole family, and the kids can help sort the seeds! Clean your pumpkin and separate the seeds. Place them in a bowl. Do not rinse. Add a drizzle of olive oil. Approximately 1/4 cup. Generously sprinkle garlic salt while mixing to evenly coat the seeds. I then add a few shakes of Italian seasoning. Mix well. Place the seasoned seeds on a cookie sheet in a single layer. Roast in a 325 degree oven for 1 hour. Make sure to check on them often and stir them occasionally. Try to flip them over twice while cooking. If you like crisper seeds you can cook them longer. When the seeds are done roasting, place them in a serving bowl and sprinkle with some parmesan cheese. Store the seeds in an air tight container. Enjoy!
