How Do You Make Japanese Cucumber Salad?
There aren’t many foods I enjoy more than sushi– except sushi served with this perfect cucumber salad! It’s simple, refreshing and forgiving on your figure! Ideal as a light afternoon snack or dinner side dish! Mix vinegar and sugar until sugar is dissolved. Set aside in refrigerator. If sesame seeds are raw and need toasting, heat a skillet or flat pan over low/medium heat. Add sesame seeds until browned slightly. Set aside. Wash cucumbers thoroughly. Slice off ends of cucumbers and peel, leaving some skin. Using a small spoon, remove seeds and guts of cucumbers. Slice cucumbers into thin, half-moon pieces, no thicker than the width of a chopstick. Pour vinegar/sugar mixture over cucumbers in medium bowl. Mix well. Top with toasted sesame seeds and serve chilled.
