How Do You Make Kimchee?
Kimchee is a traditional Korean cabbage side dish eaten along side rice. There are many variation to this dish. You can substitute Radish or cucumber in place of the cabbage. Some kimchee recipes can be pickled and eaten “sour”. This perticular recipe is not meant for that style, but could be, but not recommended. Step 1 Wash and cut 1 head of cabbage into bite size pieces. Wash and cut 6 leeks into one inch pieces. Wash and shred 2 carrots. Step 2 Put cabbage, leeks, and carrots into a large mixing bowl. Step 3 Sprinkle a generous amount to salt onto cabbage, leeks, and carrots. Step 4 Add 2 tablespoons of garlic, 1 to 1 1/2 cups hot pepper flakes; depending on desired spiciness, 2 tablespoons sugar, 4 tablespoons of sesame seeds and 2 tablespoons of sesame oil. Step 5 Mix thoroughly. If kimchee looks dry, water can be added to compensate do not add too much water as this will throw off the proper consistancy. Enjoy.
