If you do not have a mortar and pestle, spread a small amount of dried lavender on a cutting board and crush it gently with a rolling pin or a large wooden spoon. Pour lavender blossoms into a clean glass container. Large Pyrex measuring cups with spouts work well. Pour olive oil over the lavender blossoms. Stir gently and cover. Place olive oil and lavender mixture (covered) in a cool dry place. Stir or shake daily for one month. At the end of the month pour the oil and lavender through a strainer into another glass container. Use a funnel and pour into a glass decanter for a decorator look.
