This traditional Christmas treat, is easy to make and has a wonderful holiday presentation. Peppermint Bark uses sweet white and dark chocolates sprinkled with broken chunks of peppermint candy. The perfect treat or gift. Place it in a decorative bag, jar or tin. Great last minute gift for unexpected guests. Line the cookie sheet with a 12″ length of foil. Combine bittersweet/semisweet chocolate, whipping cream, and peppermint extract in a bowl set over saucepan of barely simmering water, until chocolate is melted and smooth. When the chocolate feels warm to touch, remove from over water. Note: By placing a bowl over a saucepan with slightly simmering water, you are making a homemade double boiler, don’t allow bottom of bowl to touch water. Pour the chocolate onto the foil, using a spatula to spread evenly in the pan. Sprinkle half of the crushed peppermints over the chocolate. Chill in the refrigerator until set, about 20 minutes.
