How Do You Make Leftover Mashed Potato Candy?
Wondering what to do with all those leftover mashed potatoes on Thanksgiving? Well, you could make mashed potato candy. It’s easy to make and it’s a treat that’s sure to please! If you have children, they will enjoy helping you prepare this sweet candy. In a large bowl, combine the mashed potatoes, powdered sugar, 2 tablespoons milk, and one teaspoon of vanilla. Mix well. Sprinkle powdered sugar over a cutting board or other flat surface, and roll out the mashed potato/powdered sugar dough until it is about a quarter of an inch thick. With a small spatula, spread creamy peanut butter over the dough. You can spread the peanut butter as thick or as thin as you like. Now roll up the dough like a jelly roll loaf. Wrap in plastic wrap and chill mashed potato candy roll in the refrigerator for a couple of hours. Slice into quarter inch thick slices and serve.
