Sprinkle powdered sugar over a cutting board or other flat surface, and roll out the mashed potato/powdered sugar dough until it is about a quarter of an inch thick. With a small spatula, spread creamy peanut butter over the dough. You can spread the peanut butter as thick or as thin as you like. Now roll up the dough like a jelly roll loaf. Wrap in plastic wrap and chill mashed potato candy roll in the refrigerator for a couple of hours. Slice into quarter inch thick slices and serve.
