I love mangoes especially the ripe ones. The best mango to use for desserts are Manila mangoes. It’s sweet and delicious! You can buy Manila mangoes from oriental stores, Filipino stores or sometimes at your local grocery stores like Lunardi’s Market if you live in the Bay Area (CA). Here’s one of my favorite mango desserts. Slice both sides of the mango and cut a cross-hatch pattern through the mango pulp down to the skin to cut mangoes into cubes. If you would like to learn how to cut a mango, check out the steps on eHow.com. Boil 3 1/2 cups water. Then, dissolve 2 envelopes of Knox unflavored gelatin powder into your boiling water. Stir until powdered gelatin is completely dissolved. Pour into mold and refrigerate for 30 minutes or until slightly set. Once lightly set, drop the mango cubes distributing them evenly. Refrigerate again to let it set completely. Unmold, serve and enjoy!
