Leftover mashed potatoes were a wonderful excuse to make delicious Mashed Potato Candy in the home where I grew up. It’s yummy fun! Put leftover mashed potatoes in a bowl. Stir in powdered sugar a little at a time to create a stiff batter. The actual amount of powdered sugar will vary based on how moist your potatoes are. When batter is stiff but not so dry that it falls apart, place it on a flat surface and roll out with a rolling pin to a thickness of one-quarter inch. Using the knife, spread peanut, cashew or almond butter on your dough and roll it up. Cut candy pieces in half-inch segments and lay them on their side as pinwheels. Allow to air dry for at least an hour. Enjoy!
