How Do You Make Matcha Fruit Syrup?
• Mix the sugar and matcha in a saucepan. • Add the water and bring to the boil while stirring constantly. Don’t let it boil over. • Reduce to a simmer and leave to reduce over 15 minutes. Stir occasionally and keep checking it is cooking well. • Remove from the heat. • Strain to remove clumps of matcha powder. • Add the chopped fruit to the strained syrup and mix completely. Serve. Leave to cool. Once cooled, pour over ice cream etc. as wished.
