• First, begin by lining the inside of an 8 or 9 inch square pan with waxed paper. • Next, in heavy saucepan over low heat, melt the semi-sweet chocolate chips with 1 cup sweetened condensed milk and vanilla. Stirring slowly to make sure the chocolate doesn’t burn. • Spread half of the mixture into the prepared pan and chill in the refrigerator for 10 minutes, or until firm. Reserve the remaining chocolate mixture at room temperature. • Next, in another heavy saucepan over low heat, melt the white confectioners’ coating with remaining sweetened condensed milk (mixture will be thick.) • Stir in the peppermint extract and food coloring. • Spread this mixture on the chilled chocolate layer and continue to chill for an additional 10 minutes, or until firm. Take out of the refrigerator, and slice into your choice sized squares and place on platter.
