Chicken soup is not only tasty, it’s so healthy it’s earned the nickname of Jewish penicillin! Using ingredients easily found at any supermarket, it’s super-easy to make from scratch. No recipe needed! Start with boneless, skinless chicken breasts or thighs. (Breasts are lower in calories but thighs have more flavor.) They can be either fresh or frozen. If they’re frozen, it’s not really necessary to thaw them first. Just cover and cook a bit longer. Cook chicken pieces in a little olive oil until opaque all the way through. Remove from pan and chop or shred. In the same pan, sauté some chopped onion, sliced celery and possibly some garlic in a little more oil until golden but not brown. Add liquid. The best base is broth. (The tetra-packs of broth are really good! But bouillon is good too – just follow the directions on the package.) You want enough to cover the veggies by at least several inches. You can also add a bit of white wine, if you wish. Put the chicken back into the pot. Ad
