Drain all cooking liquid and let the potato sit in the strainer until the steam goes away and all liquid has dripped away. Put potato into mixing bowl and begin mashing with the fork. Add confectioner’s sugar and mix it into the potato with the fork. Continue until you have a heavy dough consistency. It should be dense and heavy such as children’s play dough. Press the dough out into a 1/4 or thinner layer. Spread a layer of peanut butter over the surface of the dough. Roll dough up jelly roll style.
