My wife’s grandmother made this often when she was a kid. They would have it for breakfast when they went to her house. I just found her recipe. Very simple. Cook the rice as you normally would. I cook 2/3rds cup rice in one cup of water for about 15 minutes. This recipe is for that amount of rice but can easily be doubled, tripled or whatever. For my family I four times this recipe. Combined cooked rice in a pan with 1 quart of milk and 1/2 cube (1/4th cup) margarine. Cover and simmer on low heat for 1 hour. Beat eggs (3 or 4) with 1/2 cup sugar and vanilla. Add eggs to the rice mixture that is still cooking on the stove and stir so the eggs cook slightly. Add raisins if desired. I like the raisins, my kids don’t, so I add them just to my portion. Pour into serving bowls and sprinkle with sugar and cinnamon. It can be served warm or chilled. I prefer warm.
