How Do You Make Onion, White Bean And Gruyere Soup?
Onion, white bean and Gruyere cheese soup is something of a classic, as chefs all over the world prepare and serve this soup quite regularly. Combining the strong, nutty flavor of Gruyere cheese, an aged cows-milk cheese first made in Switzerland with rich, earthy cannellini beans white and yellow onions and fresh sage and thyme, this soup is satisfying and comforting while remaining complex. Serve with crisp Italian bread and butter and a glass of white wine without too much acidity. Place the dried cannellini beans in a large bowl and cover with water. Soak the beans overnight. Drain the beans in a colander and place them in large saucepan. Cover the beans with fresh water and add the white onion, garlic, celery, bay leaves and sage. Bring to a boil. Skim any scum that appears on the top of the soup with a slotted spoon. Lower the heat and simmer for 30 to 35 minutes. Add the sea salt and simmer for an additional 10 to 12 minutes or until the beans are tender. Drain the beans. Reserv
