My family made apple butter for 2 important reasons that are just as valid today. It tastes good and is a good way to use up apples that are so plentiful this time of year. Once upon a time apple butter was cooked in kettles over a fire outside and it had to cook for a long time. Neighbors and family had to take turns stirring as it had to be stirred constantly. This Apple Butter recipe needs little stirring. But it still taste great. Preheat oven to 350 degrees Wash and peel apples Combine water and salt. Add apples slices. Drain well but do not rinse slices. Put in food processor using the S blade. Measure pulp and juice (there should be 2 Qts). Combine with cider. Place in large enamel stock pot. Center pot in moderate oven (350 degrees) Let mixture simmer about 3 to 3 1/2 hours until cooked down about half and is thick and mushy. Stir thoroughly every half hour. Put mixture through sieve or food mill; it should yield 2 1/4 to 2 1/2 quarts. ( Sieves and food mills are old fashioned
