The recipe below is one for Parmesan Cheese and Potato Chowder; and it’s a soul-warmer, I assure you. 1. Cook the potatoes in boiling water until tender. 2. In a soup kettle, saute the chopped onions in butter until tender. 3. Stir the flour and spices into the onions. Then gradually add chicken broth, stirring constantly. Bring the mixture to a boil, cooking and stirring for 2 minutes. Add the potatoes, and bring it back to a boil. Now reduce the heat, cover the kettle with its lid, and simmer for 10 minutes. 4. Uncover the kettle and stir in the milk and cheese. Heat it through. 5. You’re done! Turn off the heat, serve it hot, and you will extract about 6 servings from this recipe.
