This pasta salad is a favorite with my family and friends. I make it for all of our summer barbecues & it’s always a big hit. It’s a cross between a pasta salad and an anti-pasta, hence why we call it the pasta anti-pasta salad! Not, because it’s a pasts salad with NO pasta! Cook your spiral pasta in boiling salted water according to the package directions, or until it is cooked to your preferred tenderness. When the pasta is done cooking, drain and rinse with COLD water. Run cold water over the pasta until it begins to be cool. (You can throw a few ice cubes in it to help the pasta cool down). Set it aside to let it drain and dry. Meanwhile, cut your pepperoni and salami into small bite sized pieces. You want to use pepperoni sticks for this, not pre-cut or cold cut type slices. If you prefer to buy it from the cold cut counter, you can ask for one THICK slice and then cut it into the bite sized pieces at home. I buy already diced olives, if you bought whole ones, dice them up – cutti
