Pasta salad is always popular during the warmer weather and this pasta Greek salad is a really nice change. You can experiment with different vegetables such as adding a handful of fresh green spinach leaves or even a few quartered artichoke hearts. For best results, allow pasta Greek salad to refrigerate several hours or overnight. Cook pasta according to directions. Drain and rinse with cold water and place in a large bowl. Add the peeled and seeded cucumber, sliced onion, black olives and feta cheese. Note: To seed the cucumber simply slice the cucumber down the middle and run a spoon down the middle of each cucumber to remove seeds. Slice as usual. For the dressing combine the extra virgin olive oil, red wine vinegar, garlic powder, dried basil dried oregano and salt and pepper to taste. Whisk together until well blended.
