There are so many great recipes for pasta salad. Typically I made this recipe as a warm pasta entree but then I thought it would make a fantastic cold pasta salad. Serve this at your next cook out or as a light summer dinner with a fresh loaf of Italian bread! Start large pot of water boiling. Cook rotini pasta according to directions. Drain and rinse with cool water. Toss with about a tablespoon of olive oil. Put in covered container in the refrigerator after cooling for a few minutes. In a large serving bowl, mix oil, garlic, shallot and 3 teaspoons lemon together. Add salt and pepper to taste (about 1/8-1/4 tsp each). Add cherry tomatoes (each sliced in half) and combine. Set aside for no longer than 30 minutes (cover bowl). Add cooled pasta to tomato mixture. Mix gently. Refrigerate for about 15 minutes. Remove pasta from refrigerator and add fresh mozzarella (cut in bite sized cubes)as well as chopped basil. Add additional salt, pepper and lemon juice to taste. Serve immediately.
