My mom shared this family favorite recipe with me many years ago. If you like peanut butter cups, you will enjoy these cookies! INGREDIENTS: 1/2 cup margarine, softened 1/2 cup granulated sugar 1/2 cup brown sugar 1/2 cup creamy peanut butter 1 large egg 1 teaspoon vanilla 1 1/2 cups all-purpose flour 1/2 teaspoon salt 3/4 teaspoon baking soda mini peanut butter cups, unwrapped In a mixing bowl cream together margarine, sugar, brown sugar, peanut butter, egg and vanilla. Stir in flour, baking soda and salt. Mix well. Form dough into 40 balls. Place each ball into a greased mini-muffin (tassie) pan. Do not press dough into cup shape – bake in ball form. Bake cookies at 375 degrees for 8 to 10 minutes. Remove from the oven and press one mini peanut butter cup in the middle of each cookie. Let cookies stand in pan until completely cool. Carefully remove from pan and enjoy!
