How Do You Make Peanut Butter Sandwich Cookies?
These cookies remind me of Nutter Butter cookies. A smooth peanutty filling is sandwiched between two yummy crunchy cookies. They are pretty simple to make. Bake and fill. The cookies are great without the filling! This recipe makes about 40 cookies. In a large mixing bowl, cream the shortening, peanut butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition after each addition. Add vanilla. Stir in baking soda and salt into creamed mixture. Then add in the flour. Shape into 1-in. balls and place 2 in. apart on ungreased baking sheets. I prefer to use parchment paper. Flatten to 3/8-in. thickness with fork. Dip a fork in flour before flattening to prevent sticking. Don’t press too hard. Press twice, making a crisscross pattern. Bake at 350° for 8-10 minutes or until golden. Remove to wire racks to cool. For filling, in a large mixing bowl, beat the peanut butter, confectioners’ sugar, vanilla and enough milk to achieve spreading consistency. S
