This is a very delicious enchilada casserole recipe that always comes out a hit. Serves up to four people and doesn’t take more than 20 minutes to prepare. Hope you enjoy! Preheat oven to 350 degrees. Cook ground chuck until well browned, drain, and rinse with cold water. Blend rotel and cream of mushroom soup in blender. Blend until no large chunks are still visible. Mix cooked hamburger meat, blended rotel and cream of mushroom soup mix, chopped onion, and add salt and pepper to taste. Stir together until mixed throughout. Tear corn tortilla into bite sized pieces and layer them in the bottom of a 9″ by 9″ greased casserole dish. Pour half of hamburger mixture on top and then layer with half of the shredded cheese. Repeat another time, ending with the cheese. Cook casserole uncoverd for 1 hour. Let cool. Use a spatula to loosen casserole from the sides of dish.
