For most people, the idea of making home made pasta noodles sounds horribly difficult. I thought so too, until one day at a cooking lifestyles class taught me other wise. Some people say “only by hand” will do, but I say if it’s easier in the food processor, tastes the same and has the same consistency, WHY NOT? This is a very simple process. First, I start off by putting the food processor bowl into the fridge. Cooling it down will help the pasta dough mix properly and help it from not getting mushy. Take 1 ¾ c. of semolina flour (or un-bleached if you prefer) and sift it well so there are no clumps. I like to sift mine into a large bowl instead of the food processor; it makes less of a mess. After it’s sifted, add it to the food processor and add 3 large eggs one at a time. This would also be the time to add your chosen herbs to flavor the pasta…Italian seasoning, crushed rosemary, crushed garlic (or even garlic powder) all work very well to season the pasta.
