Perfect for egg salads, deviled eggs or your favorite recipes. Place raw eggs (six is usually a good number to cook at one time) in a pot and add COLD water until the eggs are just covered. On high heat on stove, bring the eggs to a boil, then immediately reduce heat so that water is simmering. Simmer for 15 minutes. Drain the hot water from the eggs. Refill the pot with COLD water and a few ice cubes. Let cool for 2 minutes, then drain the water. (you can cool for longer, but do not wait too long or eggs may become less easy to peel the longer you let them sit). Peel immediately by tapping the egg gently on the counter and then rolling the egg between your palms. Finally, remove the shell.
