When you want to try a new and interesting twist on pizza, try this recipe. It has no sauce, so the topping have to speak for themselves, and they do. This recipe is one of my favorites. Hopefully it will be yours too. Combine 2 Tbls. of olive oil, the thinly sliced tomatoes, chopped garlic, and salt in bowl. Allow this mixture to marinate about 20 minutes to 1 hour. Brush the pizza dough crust lightly with olive oil. Top the dough with sliced mozzarella cheese, then fresh tomatoes. Drizzle with more olive oil. Bake in preheated 500F oven on a pizza stone or a pizza pan (the stone is better) for 8−10 minutes or until crust is golden brown and cheese is bubbly. Remove from oven and immediately top with parmesan cheese, then the fresh chopped basil. Cool on a wire rack for 2−3 minutes before cutting into wedges and serving this mouthwatering goodness to your guests.
