There is just no better way to impress your friends and family, then this quick and clever recipe! Rinse your chops under cold water and pat dry with paper towel. Using your knife make 1-2 inch slits on the sides of the pork chops making space for your stuffing (use your finger to make a little cave in each one) season each pork chop with salt, pepper and rub with extra virgin olive oil. Refrigerate for 30 minutes. Cook spinach in microwave for 2-3 minutes then drain. Mix ricotta cheese, spinach and garlic and add salt and pepper to taste. Use 1 tablespoon of stuffing for each pork chop. Use toothpicks to hold stuffing in place. In a large frying pan, heat enough cooking oil to fill the bottom. Then carefully place pork chops in pan.
