You can make this potato salad in around one minute. Quick and Easy! O.K., I didn’t count the time it takes to microwave the two potatoes. I am assuming they are left-overs from last night. It is a modern potato salad, and I think you will like it. My husband liked it, and he doesn’t really like traditional mustard potato salad. But, when called upon to bring a dish when someone dies, potato salad is a favorite. It can be eaten cold and keeps well. It also goes well with just about anything. Step 1 Whip out your best knife. Slice the baked potatoes in slices around 1/4″ thick. Do not peel. You want the slices to be big enough to not really fall apart too much. Step 2 Chop onion CARELESSLY, and add to bowl. (I said quick and easy!) Step 3 Add dressing, pickle relish with liquid, and generous salt, pepper, onion powder and a light sprinkle of parsley. Toss, don’t stir so the potatoes don’t get disturbed too much.
