In my house I serve this festive rice as a one pot dish. It saves time and also goes great with salad. In spanish we refer to to this type of dish as “Arroz Junto” which basically means rice cooked together with either beans, vegatables or meat. There are a thousand things you can add, be creative and make it your own. In a large pot, heat olive oil over medium heat. Add sofrito, garlic, chorizos, olives, tomato sauce, and cook until the liquid has evaporated and the ingredients start to sizzle. Add rice and chick peas, stir until rice is coated with oil and seasonings and rice turns chalky. Add water, salt and pepper to taste. Bring to a boil on high heat and boil without stirring until the level of liquid has reached the rice. Give the rice a big stir, turn heat on low and cover pot for 20 minutes. Uncover the pot, give the rice a big stir, bringing the rice on the bottom to the top, and serve.
